Halfway through editing an album of photos with microsoft photos (windows 11) it stopped saving my edits and reverted to the original file. What's wrong?

Welcome to the Microsoft Q&A forum.
It might just have been a case where you experienced a brief error. If you're making many edits, consider using Save as copy (if available) instead of overwriting the original. That way, if an edit fails, your previous work isn't lost.
