Hello,
I've seen other people have this issue and haven't had a good answer yet.
I've managed to delete the profile and even parsed the registry and deleted all instances of the unwanted profile email.
However, Edge manages to remember, so I'm guessing it must be stored in the cloud?
This is my personal PC and I don't want the cloud to keep overwriting local settings.
This is a snapshot of what I'm talking about, the highlighted in green is my Profile email. The other one [Moderator Note: Personal Info Removed] is the email I'm trying to erase so it doesn't keep showing up when I want to log in to edge.

The AI answer has provided some good suggestions. If you haven't already, I'd recommend giving those steps a try first, particularly removing any unwanted profiles and clearing related credentials from Credential Manager.
If the account still appears after completing those steps, could you also check Settings > Accounts > Email & accounts and look under Accounts used by other apps? If the Gmail account is listed there, try removing it, as Edge can sometimes retrieve account information from Windows account storage rather than the Edge profile itself.
As a further troubleshooting step, you could back up any important Edge data and then reset Edge by going to Settings > Reset settings > Restore settings to their default values.
