All I can suggest is that you Vote for and Comment on these existing Feature Request. If enough people vote for these Request someone at Microsoft might notice and stop this madness.

(You must "Sign In" at the top right of the Feedback page before you can vote).

Excel/Word links open via desktop apps rather than browser

    Hi @GB

I understand that you want Word, Excel, and PowerPoint links in New Outlook to open directly in the desktop apps, but the relevant option does not appear in your settings.

Please note that this is a user-to-user support forum. Moderators, contributors including external Microsoft employees cannot directly intervene in Microsoft product features or access back-end systems. Our role is limited to providing technical guidance on reported issues, requests, or ideas only.

The option is currently documented for Word, Excel, PowerPoint, Teams, and Classic Outlook, but not for New Outlook. Therefore, you will not see this setting in New Outlook.

As a workaround, open Word, Excel, or PowerPoint and select File > Options > Advanced > File open preference > Desktop. However, this preference may not apply to links selected from New Outlook. You may need to use Classic Outlook or select Open in desktop app after the file opens in the browser.

You can also submit feedback through New Outlook > Help > Feedback to request this option.
